A very common dish in the Caucasus are various types of miracles. Today I will tell you the recipe for my favorite miracle - Dargin.

To prepare the Dargin miracle we will need: flour, yeast, chicken breast, potatoes, eggs, salt, pepper.

First, let's quickly figure it out and set it up to rise. So, take 2-3 cups of flour, add a little yeast and salt, pour in a little warm water and mix until you get a dough. Afterwards we put the dough in a warm place, I wrap it in a blanket so that it rises and becomes fluffy. How I did everything and what I got, look at the photo.

While the dough is rising, we will do it. To do this, we cut the chicken breast into small and thin pieces, and cut the pre-peeled potatoes into half rings, after everything has been cut, mix the chicken with the potatoes, add salt and pepper to taste. This time I didn’t add anything else, but sometimes I add greens and onions. Also, instead of chicken, you can use other meat, also cutting it thinly and finely. Experiment, you will succeed. We also need 2 eggs for the filling. We beat them and add a little mayonnaise (optional) and a little salt. At the same time, since we are busy with eggs, before you add mayonnaise to the eggs, pour a little into another bowl, we will smear our miracle with it so that it is beautiful and rosy. After all the preparations, the dough has risen, let's start making the miracle itself. To do this, you need to divide the dough so that one part is slightly larger than the second. We roll out both parts, and put our filling on the larger part, covering it with the resulting mixture of eggs and mayonnaise.

Afterwards, we close our miracle from above with the second part and pinch the edges. Now, so that the miracle in our oven does not swell, we make a small hole in the middle and coat it with an egg, left in advance especially for this purpose. Next, we place our miracle on a baking sheet, note that it is not smeared with anything. You can even initially make the miracle in a baking tray, it’s even more convenient. Minced meat is used for filling. It is always laid raw. Most often it is beef or lamb. You can find recipes with chicken. In addition to meat, various vegetables can also be added to the filling, mainly potatoes.

They make miracles in the form of chebureks or round pies. Let's follow the recipe. Pies are mainly baked in the oven, and products in the form of semicircles are often fried in a frying pan, but without oil. The finished miracle, while it is hot, is generously greased with butter.

Miracle with meat and raw potatoes

Raw potatoes are often used in various pies, so why not make a miracle with them? This is one of the most common fillings, after meat, of course.

Ingredients

3 medium potatoes;

300 grams of meat;

300 grams of flour;

50 grams of onion;

Pepper and vinegar.

Preparation

1. Shake the egg with salt and half a glass of water, add flour and knead into a stiff bun. We put it away for rest and leave it on the table for half an hour.

2. Twist the meat into minced meat, add chopped onions and spices.

3. Peel the potatoes and grate them. This must be done immediately before forming the products. Otherwise the potatoes will turn black.

4. Combine potatoes with meat filling, pour in a teaspoon of vinegar and mix vigorously.

5. We take out the dough, divide it into pieces, roll out flat cakes and make a miracle.

6. Fry the products in a dry frying pan on both sides.

7. Grease with oil, place in a stack and cover with a napkin to soften. You can cover with an inverted bowl.

Miracle with meat in Dargin style

The Dargin miracle dish differs not only in its recipe, but also in its appearance. The product is not molded in the form of a cheburek, but is a round pie for slicing, which is baked in the oven. Baking is prepared with the addition of raw potatoes.

Ingredients

0.4 kg potatoes;

0.5 l of kefir;

500 grams of flour;

20 grams of vegetable oil;

400 grams of minced meat;

30 grams of butter;

1 onion;

Preparation

1. Salt the kefir, add flour and knead the usual stiff dough, at the end add a little vegetable oil. Let it rest under the bowl.

2. For the filling, finely chop the peeled onion and add to the minced meat.

3. Peel the potatoes and cut them into thin slices, add the minced meat and mix well. Don’t forget to season the filling with spices, you can add chopped herbs.

4. We take out the already rested and softened dough, divide it into two parts. Let's make one a little larger, it will go to the bottom.

5. Roll out a piece of dough that is larger in size. Place on a baking sheet.

6. Now evenly distribute the layer of filling, leaving two centimeters from the edges unaffected. If the meat is not fatty enough, you can rub a little butter on top of the filling.

7. Roll out the second cake, cover the pie, and curl the edges tightly. Now be sure to make a round hole in the center of the miracle. Steam will escape through it.

8. Set the oven temperature to 220 degrees. As soon as it warms up, place the pie and bake for about half an hour.

9. Take it out, grease it with oil and let it soften.

The miracle can be lubricated not only with a piece of butter. It tastes delicious with melted butter. And if you don’t have anything at hand, you can brush the surface with heavy sour cream or cream.

If the miracles are fried on the outside, but remain raw on the inside, then simply place them in the microwave for three minutes, and then grease them again with oil.

A miracle is characterized by a slight crunch on the onion. That is why they prefer to chop it rather than twist it along with the meat. But if you don’t like the crunch and taste of half-cooked onions, you can always twist them. Or fry it a little and only then add it to the filling.

To fry the miracle, it is better not to use a Teflon-coated frying pan. It is believed that cast iron is best suited for this purpose.

Vinegar is a very important element of minced meat for miracle. But you don’t have to put regular essence. You can use apple, wine and any other fruit vinegar.

  • warm water - 2 glasses;
  • dry yeast - 1 packet (10 grams);
  • salt - half a teaspoon;
  • vegetable oil - 2 tablespoons;
  • flour - 4-5 cups (the exact amount of this ingredient when preparing Dargin (Dagestan) miracles will depend on the amount of gluten in the flour);
  • egg - 1 piece (necessary for lubricating the miracle before sending it to the oven);
  • butter - 50 grams (for lubricating the finished product).

To make the Dagestan miracles more juicy and tender, we place potatoes and meat inside. To prepare the filling you will need:

  • beef - half a kilo;
  • potatoes in the amount of two to five medium tubers;
  • onion - one head;
  • various spices.

Yeast dough

Let's prepare the dough according to the simplest recipe using water, salt and yeast with flour. We repeat step by step:

  1. We take suitable deep dishes - it can be a large bowl with high walls, a saucepan or even a small basin. In general, a container in which it will be convenient for you to knead the dough.
  2. Heat the water slightly.
  3. Pour the yeast into a bowl and add water to it. There is no need to pour out all the liquid at once. In order to dilute them, take 250 milliliters.
  4. When the dry yeast dissolves and the reaction begins, add salt.
  5. Add vegetable oil and gradually flour.
  6. Knead the dough; the consistency should be elastic, but not tight, not stick to your fingers and keep its shape.
  7. Cover the dish with a lid, towel or napkin. Place in a warm place so that the base for the miracle rises well. This will take about an hour, during which time you can prepare the filling.

Filling

While the dough is rising, don't waste your precious time and start preparing the filling:

  1. Wash the potatoes under running water. Peel the root vegetables and leave them in clean, cool water.
  2. Peel and chop the onion in a convenient way.
  3. Rinse the meat too. Dry with a towel to remove excess moisture. Grind into small cubes.

The ingredients for the filling are prepared. Let's start shaping the miracle:

  1. Remove the dough from the bowl and knead it well on the cutting table. Divide into two parts. One part of the dough will be the base, so it should be a third larger than the second, which is used to cover the miracle. Roll out most of it into a thin round layer no more than a centimeter thick.
  2. Place the base on a sheet coated with vegetable oil. Now you can spread the filling on the surface. The meat is placed in the first layer. At this stage, lightly salt it and add all the necessary seasonings. The most basic of them is freshly ground black pepper. But be guided by the preferences of your family members. Sprinkle the meat generously with onions.
  3. Potatoes can be cut into thin slices. Place the potato slices on the surface of the meat cubes and onions. Lightly salt them too.
  4. Roll out a smaller part of the dough in the same way as the first and, covering the filling with a layer, carefully pinch the edges. In the middle of the workpiece, make a small hole with a diameter of about 1 centimeter. This technique will allow the Dagestan miracle to bake well inside and maintain the desired shape of the finished product.
  5. Brush the entire surface of the future miracle with a raw egg. Place the baking sheet in the oven for 30-35 minutes. The oven must be preheated thoroughly.

Half an hour later, the Dagestan dish is miraculously ready! This is hinted at by the breathtaking aroma coming from the kitchen and the golden color of the baked goods. Remove from the oven and generously brush the pie with a knob of butter.

Fresh miracle

It will take a little more time to prepare a miracle from unleavened (yeast-free) dough. But you will be richly rewarded with admiring glances from your favorite eaters. Before you cook the Dagestan miracle in a frying pan, let’s decide on the filling. In our case, it will consist of potatoes and cottage cheese. By the way, you can use water or kefir for the dough. In the second case, the baked goods will be more tender.

List of components:

  • kefir - 1 glass;
  • flour - 2.5 cups;
  • half a teaspoon of salt;
  • soda - half a teaspoon;
  • two potatoes;
  • hard cheese - 80 grams;
  • butter - 40-60 grams;
  • favorite greens - to taste;
  • freshly ground pepper - according to personal preference;
  • salt - to taste.

Cooking technology

You will need to prepare some ingredients in advance:

  1. Boil the potatoes in their jackets, after thoroughly washing them with a brush. Remove the finished tubers from the water, remove the skins and mash until pureed.
  2. Grind the cheese on a fine grater.
  3. Soak the greens in cool water for a few minutes and then shake off excess liquid and chop as you like.

To prepare the dough, pour kefir into a bowl and add quicklime soda to it. Next, add the entire amount of salt to the sizzling liquid and, after stirring, add in small portions all the flour indicated in the recipe. The correct final result is an elastic dough that does not stick to your fingers. In addition, it should be very soft. For ten to fifteen minutes, forget about the test. After this time, knead it well again. Next, start shaping the miracle.

Divide the resulting dough into several equal small parts. If the diameter of your frying pan is 20 centimeters, then you should get 9 pieces for the miracle. A different size of dishes, accordingly, will entail some changes in their quantity. You can fill the blanks with potato and cheese filling in two simple ways. Choose which one is more preferable in your case.

Method one

Roll out each piece of dough into a thin flat cake on a table that has been previously floured. Place one tablespoon of the prepared filling in its center. Gather the edges at the top and seal. It turns out to be a sort of “bag” with filling inside. Press the surface of the workpiece with your palm so that it is slightly flattened for further action. Using a rolling pin, gently roll out the flatbread again. Of course, it is better if the filling does not leave the confines of the cake during this procedure. However, even if such a nuisance occurs, nothing critical will happen. Roll out the miracle to a thickness of one centimeter. If possible, you can make the cake even thinner. But remember that the circumference of the workpiece must correspond to the diameter of the frying pan.

Second way

As in the first option, divide and roll out the dough, and then place the finished filling, but only on half of the product. The layer should be thin and even. Smooth it with a spoon to prevent the dough from tearing while shaping. Don't reach the edges a little. Fold the round cake in half. It turns out to be a huge dumpling. Bring the edges together by pressing the dough all the way around with your fingers. Roll out the dough to the diameter of the dish in which you will bake the Dagestan miracles. You can bake a miracle in the shape of a semicircle.

Cooking in a frying pan

Heat the dishes over very low heat. It should warm up evenly, but not get hot, so that the miracle does not instantly burn. The frying pan is not greased. Place the dough on a dry surface and bake over very moderate heat. Fry the miracle on both sides. Unleavened products will not be evenly golden, so after waiting until brownish inclusions and bubbles appear on one side, turn the workpiece over to the other side. If the tortilla suddenly puffs up (it happens), don't worry and just poke those air pockets with a fork or knife.

Ready-made Dagestan miracles should be flat. Place them from the frying pan onto a plate, brushing them with oil pinched onto a fork. Bake the second cake using the same technology and place it on a plate on top of the first, again generously greased with butter.

The most delicious miracle with potato and cheese filling is ready. Serve them hot and piping hot.

Miracle with meat and potatoes
You need to knead unleavened yeast dough.
Add 1 tsp to 0.5 liters of warm water. sugar and 2 tsp. dry yeast. Let it ferment for about 15 minutes. Then add 1 tsp. enough salt (without a slide) and enough flour to make a soft dough

Preparing the filling:
minced meat (250 grams, because we will get 2 miracles), mix with finely chopped onion (1 head), spices (I used salt, pepper and maybe greens, if you like). I added 0.5 cups more water, because... the minced meat was very dry
Peel, wash and cut one potato using a grater (or just with your hands)
The main thing is that it is thin

Divide the dough into 4 parts - 2 larger (for the bottom) and 2 smaller (for the top)

Roll out the smaller piece of dough with a rolling pin
And place it on top of the filling. Pinch the edges well, make a small hole in the middle (for steam to escape)
Leave for 10 minutes alone (do not lubricate the top with anything). During this time, our oven will warm up.
Bake in an oven preheated to 180 C until golden brown.
Immediately lubricate the drain. oil and wrap in a bag to make it softer.

Another recipe... Miracle with meat and potatoes

Products:
Lamb (pulp) - 300 grams
Potatoes - 500 grams
Onion - 2 heads
Wheat flour - 500 grams
Fat

Salt
Preparation:
Peel the potatoes, rinse under cold water, cut into small cubes.
Peel the onions and cut into small cubes. Clean the meat, rinse, cut into small pieces.
Finely chop parsley or dill (if there are no greens, you can add ground cumin), combine everything and mix thoroughly.
Prepare hard unleavened dough, divide into parts, roll out into not very thin flat cakes, put prepared minced meat on half of each flat cake, cover with the other half, pinch the edges, bake in the oven or fry in a frying pan in vegetable oil (served with vinegar).
Grease the finished miracles and stack them on top of each other to evaporate. Instead of unleavened dough, you can make yeast dough.

Miracle with pumpkin

Flour 1 kg.
Serum 350 ml.
Pumpkin 500 gr.
Onion 200 gr.
Roasted walnuts 200 gr.
Sunflower oil 4 tbsp.
Salt 2 tbsp.
Soda 1 tsp.
Cumin and pepper to taste

1. Pour the flour onto the table and make a well in the middle. Add salt and soda to the hole. Then we slowly begin to pour the serum into the cavity. And carefully knead the dough, gradually adding whey. Set the finished dough aside and start making the filling.
2. Clean the pumpkin and grind it on a coarse grater. Finely chop the onion and fry it in a frying pan until golden brown. Grind the walnuts in a blender. Mix all the ingredients for the filling: grated pumpkin, fried onions, ground nuts, add cumin, salt and black pepper.
3. Divide our dough into an equal number of circles, slightly larger than a fist and slightly smaller than a fist. We place our filling on the larger rolled out circle, leaving 2 cm of unfilled edges. On top of our filling we place another circle of dough, which was smaller in size; it should not completely cover the filling. And in a circle we begin to pinch our wonderful miracles, connecting the bottom edge of the dough to the top. After we have covered the miracle, we press it down a little with spreading movements. We make a small hole in the middle so that the miracle can “breathe.” Place the miracle in the oven, or oven, at high temperature until the dough is ready, about 15-20 minutes.
