  4. Cook until done. The mass of the finished puree is 2-2.5 times greater than the dry mass; this must be taken into account when calculating the amount of filling.

Sometimes processed pea flakes are used, which cook 2 times faster. After cooking, they are cooled and ground in a meat grinder or blender until pureed.

To combat flatulence, add parsley root when preparing pea dishes.

Yeast pies with peas and bacon in the oven

It is important that the peas in the pies are not wet. If it is watery, the baked goods may be soggy inside.

Ingredients:

  • wheat flour – 750 gr;
  • pressed yeast – 30-50 g;
  • ghee – 75 g;
  • milk – 375 ml;
  • chicken egg – 2-3 pcs;
  • sugar – 1 tbsp;
  • salt – 0.5 tsp.

For the filling:

  • peas - 1.5 tbsp;
  • bacon – 100-150 g;
  • garlic optional – 1-2 cloves;
  • salt, pepper - to taste.

Preparation:

  1. Grind the cooked peas several times with a meat grinder, cut the bacon into small cubes, mix with pea puree, add salt, garlic and spices to taste.
  2. Dissolve the yeast with a glass of warm milk, add 200 g. flour, stir, cover with a cloth and leave the dough in a warm room for 45 minutes.
  3. Add the rest of the ingredients for the dough to the dough, increased by 3 times, knead quickly so that it is not sticky, keep warm for one and a half to two hours so that the dough “fits.”
  4. Knead the resulting mass, roll it into a rope and divide it into equal pieces - 75-100 grams each. Roll out each part with a rolling pin, place a spoonful of peas in the middle, pinch the edges and form a pie. Turn the resulting pies over with the pinch side down and place them on a baking sheet; you can pre-grease it with oil. Place the products to proof in a quiet and warm room for half an hour.
  5. Cover them with beaten yolk and bake in a preheated oven at 230-240°C for 40-50 minutes.

  • flour – 3-3.5 tbsp;
  • kefir of any fat content – ​​0.5 l;
  • chicken egg – 1 piece;
  • Sunflower oil: for dough – 1-2 tbsp, for frying – 100 g;
  • sugar – 2 tbsp;
  • salt – 1 pinch.

For the filling:

  • peas - 1.5 tbsp;
  • non-sweet onions – 2 pcs;
  • carrots – 1 piece;
  • any vegetable oil – 30 g;
  • salt, spices - to your taste;
  • dill greens – 0.5 bunch.

Preparation:

  1. In a deep container, mix the egg with sugar and salt with a fork, pour in kefir and sunflower oil. Mix everything. Add flour gradually.
  2. Sprinkle the table with flour and knead the resulting mixture on it. The dough will be airy. Cover the mixture with a linen napkin and let it sit for half an hour.
  3. Prepare the filling: break the cooked peas in a blender and mix with fried onions and carrots, add salt, spices to your taste and finely chopped green dill.
  4. Form the dough into a thick rope, cut it into equal pieces, and flatten them slightly. Add the pea mixture to the flatbreads, pinch the edges, turn them seam side down and roll them out a little with a rolling pin.
  5. Heat the oil in a dry frying pan and fry the pies on both sides until nicely colored.

Yeast pies with peas and beans in a frying pan

You can replace alcoholic yeast with 1 tbsp. any dry yeast. To ensure that the pies cook quickly and evenly, heat the pan and oil well.

Use the gravy from canned beans and peas to prepare tomato or cream sauce for pies and side dishes. Serve the finished pies with first courses or with vegetable salads.

  • alcoholic yeast – 50 g;

  • pepper mixture – 0.5 tsp.

Preparation:

  1. Mix yeast with 100 ml. warm water, wait 10-15 minutes for the fermentation reaction to occur.
  2. In a bowl for kneading dough, mix a chicken egg with salt, sugar and sunflower oil, pour in the yeast starter and stir in the flour.
  3. Rub your hands with sunflower oil and knead into a soft, manageable dough, leave to rise for an hour and a half.
  4. Make the filling: drain the liquid from the peas and beans, grind them in a blender, mix with finely chopped green onions, add salt and pepper to your taste.
  5. Pour a little oil onto a clean countertop, place the dough on it, knead and divide it into equal parts, about 100 grams each. Flatten each lump with your palm, put the puree in it, pinch the edges, roll out with a rolling pin greased with oil. Set aside for 25 minutes.
  6. Pour oil into a frying pan and heat it up, start frying on the pinched side so that the filling does not leak out. Place the finished pies on a paper napkin and wait until the excess fat drips off.

People of my generation, born and raised in the USSR, probably remember those pies with peas for five kopecks that were sold on the street. The lively saleswoman deftly pinned 2-3 pieces on an aluminum fork at once and wrapped them in a piece of gray paper in the form of a ribbon. The taste of those pies will never be forgotten. Today I made my fried pea pies. She ate and remembered peace, quiet and silence.

To prepare these pies we take: dry shelled peas, onions, sunflower oil, flour, milk, dry yeast, sugar, salt. Place yeast and sugar in warm milk. We wait until the yeast foams.

Sift the flour. Then pour milk with yeast and sugar into it, add salt.

Add 3 tablespoons of sunflower oil.

Knead soft dough. Everything here is as usual: it shouldn’t stick to your hands, but it shouldn’t be very cool either. The softer the dough, the fluffier the pies will be.

Place the dough in a warm place and cover with cling film. It will rise in an hour.

Preparing the filling - better in advance. Cook pea porridge. Wash the peas well with running water. Then fill it with cold water and set it for 5-6 hours to swell. After this time, the peas will completely absorb the water. Let's start cooking it. Place in a saucepan and add water. Bring to a boil and skim off any foam. Reduce the heat and cook until the peas are soft. Then drain off the excess water. Pea porridge is ready.

Fry the onions until golden brown. Add to peas. Salt to taste.

We tear off pieces from the dough.

Roll each piece into a flat cake and place the filling in the middle.

Cooking recipe pies with peas fried in a frying pan:

First of all, prepare the pea filling for the pies. To do this, rinse the peas thoroughly and add water in a ratio of 1:3. Water should sufficiently cover the peas. Leave it in this form for 3 hours or overnight to swell. Drain the remaining water from the swollen peas, rinse again and fill with clean water. This time the water should only slightly cover the peas, do not overdo it, otherwise the porridge may turn out to be too liquid.


Place the saucepan on the heat and cook the peas over low heat until they begin to puree.


When the pea puree is almost ready, prepare the roasted vegetables. To do this, cut the onion into a small cube and grate the carrots on a fine grater.


Fry the onions and carrots in a frying pan in a small amount of vegetable oil until soft.


Add fried vegetables to the prepared pea puree and season it with salt and pepper to taste. Stir and leave until completely cool. By the way, if you wish, to make the puree smoother and more uniform, you can punch it with a submersible blender or mash it with a masher.


Knead the dough for pies. Combine fresh yeast and sugar in a bowl. Mash them with a spoon or spatula until you obtain a liquid paste.


Add warm (36-38 C) whey to the resulting mixture and stir.


Sift flour and salt into a deep bowl.


Make a deep well in the center and pour the whey and yeast solution into it. Add vegetable oil.


Mixing the mixture with a spoon or your hands, knead the dough into a soft and uneven dough.


Knead the resulting lump of dough on the work table until smooth for 7-10 minutes. While kneading, you can lightly dust your work surface with flour, but just use it carefully so as not to “clog” the dough, because then the pies will turn out harder. Form the kneaded dough into a ball and place it in a greased bowl.


Cover the bowl with cling film and leave the dough in a warm place to rise for 1 hour.


Lightly grease your work surface with oil and place the risen dough on it. Carefully divide the dough into equal balls the size of a small chicken egg.


Stretch each piece of dough with your hands into a round cake 5-6 mm thick. If the dough gets sticky with your hands, grease them with a little oil.


Place a spoonful of pea filling in the center of the flatbread, as shown in the photo.


Carefully pinch the edges and knead the pie itself slightly with your hands - in this “flat” form the patties will fry much faster. Thus, form pea pies from all the dough.


Heat the vegetable oil well in a deep frying pan (or a wide saucepan with a thick bottom). Do not skimp on the oil; its level should reach at least the middle of the pies. Fry the pea pies in a frying pan in hot oil on both sides until golden brown.


Place the finished pies with pea puree on paper towels to remove any remaining oil.


Serve the fried pea pies with garlic sauce (optional). To prepare it, mix finely chopped dill, garlic cloves passed through a press and half a teaspoon (or to taste) of salt.


Pour vegetable oil and a little cold boiled water into the resulting mixture. Stir.
