    Pour the noodles into intensely boiling water, stirring frequently, bring to a boil and add the fried vegetables with the stew. Add some salt, put the bay leaf into the soup and simmer for two minutes over low heat until the noodles are ready. Season the soup with finely chopped herbs, quickly bring to a boil and remove from the stove.

    Option 3: Mushroom noodle soup without potatoes with homemade noodles

    It is a mistaken belief that noodle soup is literally broth, a pinch of spices, and a handful of pasta. Let's make the soup tastier and more aromatic, for example, add mushrooms for taste, and for the smell, we won't regret a couple of spoons of cognac. Don’t worry, there will be no alcohol left in the finished dish; it will completely evaporate during cooking, but the soup with this addition will acquire piquant flavor notes.

    Ingredients:

    • a small handful of dried white mushrooms;
    • three onions;
    • two hundred grams of fresh mushrooms (champignons can be used);
    • two spoons of cognac;
    • garlic;
    • egg;
    • a glass of flour;
    • slice of sweet cream butter (82%).

    How to cook

    Set three dried mushrooms aside temporarily. We put the rest in a bowl, pour a glass of warm water and let it sit for an hour, then rinse well and drain in a colander. We don’t throw out the strained water, it will still be useful.

    Grind the previously set aside dry mushrooms in a coffee grinder. Mix the prepared powder with sifted flour, add an egg and three tablespoons of water. After kneading, let the dough rest under a towel for at least twenty minutes, roll it into a thin layer, roll it up and cut the noodles.

    Pour two liters of water into the pan, lower the onion and three peeled cloves of garlic into it. Once boiling, boil the vegetables for twenty minutes.

    Finely chop the onion and cut the fresh champignons into neat slices. Fry the onions and mushrooms in butter for at least ten minutes, turn off the heat, and pour in the cognac.

    Remove the onion and garlic from the prepared mushroom broth. We take out the boiled mushrooms and finely chop them with a knife. Strain the broth, pour it into a clean saucepan, put chopped mushrooms in it, and wait until it boils over high heat.

    First, prepare the sauce: pour vegetable oil into a heated frying pan, once it is heated, add flour and sauté, and add spices such as cumin, garlic and oregano. Then add tomato paste and fill the mixture with 300 ml of broth.

    In a separate pan, fry the onion in vegetable oil, then add the tomatoes there.

    After the tomatoes have released their juice, add the beans, the prepared sauce and the chopped chicken fillet.

    Pour in the remaining broth and let it simmer for 3-4 hours.

    Fragrant and satisfying with fluffy, tender dumplings, chicken soup is perfect for lunch for the whole family.

    Add garlic and pre-soaked mushrooms to them. Boil the chicken fillet, cut it and put it in a frying pan.

    Add lemon juice, dry wine and a little water in which the mushrooms were soaked.

    Season the soup dressing with thyme and simmer over low heat for 10 minutes.

    Add the soaked pearl barley to the chicken broth, add the mushroom water, and add lemon slices.
