Subtleties of preparing vegetarian cabbage soup:

1. Cabbage soup can be prepared not only from fresh cabbage without meat, but also with meat.

Products:

  • White cabbage - 200 or 300 gr.
  • Carrots - 1 pc.
  • Onion - 1 pc.
  • Tomato paste - 2 tbsp.
  • Butter - for frying vegetables
  • Sour cream - 1 tbsp. in one plate

Vegetarian soups are prepared not only for adults who have consciously refused to consume meat, but also for children, as a lighter first course without meat. Such soups and cabbage soup are especially relevant for children who do not eat meat well or for overweight children. They are usually prepared with water or vegetable broth, and the finished soup (cabbage soup) is softened with sour cream or butter.

1. Finely chop fresh cabbage.

2. Place in a pan of boiling water. Cook over low heat for 10-15 minutes.

3. Finely chop the carrots into cubes. Finely chop the onion.

4. Sauté onions and carrots in a frying pan with butter, adding a tablespoon of tomato paste.

5. Add stewed vegetables and diced potatoes to the boiled cabbage. Add salt to taste and cook until the potatoes are tender, about 20-30 minutes.

6. Add a spoonful of sour cream and herbs to the prepared vegetarian cabbage soup.
