RECIPE FOR PIE WITH ARICANA FILLING

What do you need:
100 ml milk
60 ml water
1 egg
40 g butter
4-5 tbsp. Sahara

300 g flour

200 g dried apricots
150 g sugar

How to make a pie filled with dried apricots:

1. Pour warm water into a deep saucepan, dissolve the yeast in it and add a couple of teaspoons of sugar. Place in a warm place for the yeast to rise slightly.

2. Meanwhile, heat the milk in a separate container and melt the butter in it. Then add sugar and stir well. Cool slightly.

3. Then mix the yeast with the cooled milk, add vanillin, egg and mix thoroughly. Gradually stir the flour into the dough until it is not too stiff. Otherwise, it will be difficult to form a pie out of it later. The dough should be kneaded well, there should be no lumps left.

4. Place the dough in a warm place for 15 minutes, covered with a lid or thick towel. After this, the dough should be kneaded and placed in a warm place for 1.5-2 hours.

5. To fill the dried apricots, pour warm water. Let stand for 10 minutes, then drain the dirty water and transfer the dried apricots to a deep saucepan. Pour in 100 ml of water and place on medium heat. As soon as the water boils, reduce the heat to low and leave to simmer for 10-15 minutes. Then add sugar and cook for another half hour. The syrup should be thick and the dried apricots should be soft.

6. Remove the dough from the pan and place it on a floured table. Divide it into two equal parts. Roll out a flat cake from one part about 2 cm thick. And divide the second part of the dough into three more equal parts.

7. Cover a baking pan with parchment and place the resulting flatbread in it. Place the filling and carefully spread throughout the pan. Then roll out the remaining three pieces of dough into thin “sausages.” Lightly brush the edges of the cake with egg white. Place one “sausage” on top of the edge of the mold and press lightly. This way, the filling will not leak out during baking. From the remaining two parts of the dough, that is, the “sausages,” make a binding over the filling.

8. Brush the edges and binding with egg yolk and place in the oven. Leave to bake until golden brown for about 40 minutes at 180°C.

How else can you prepare the filling?

When the dried apricots are quite tough, they need to be boiled. For the filling, 400 g of dried fruits are enough, as well as approximately 120 g of sugar. Soak the dried apricots for fifteen minutes, then rinse, add hot water and place on the stove. Boil for another fifteen minutes, remove from the water and mix with sugar.

Alternatively, you can make sweet puree. To do this, soak half a kilogram of dried fruits as usual, then pour just a little water into the frying pan and transfer the dried apricots there. Simmer it, mix with sugar, grind in a blender or meat grinder.

And for a richer taste, you can supplement with dried apricots and other products. For example, you can take 100 g of dried apricots, 100 g of dried peaches, 200 g of dates, 50 g of dried cranberries, 70 g of hazelnuts, 100 g of dried apples, 5 g of cinnamon and 2 g of nutmeg, a little cloves, orange juice and zest, 180 ml sweet sherry.

Mix all of the above products in a small bowl and pour sweet sherry or wine over them and leave to soak overnight. You can exclude, supplement or replace any of the ingredients provided. Once soaked, they should be used within three to four days, stored covered with foil in the refrigerator.

Some people add pumpkin seeds or peanuts. Before use, nuts do not need to be soaked, but rather heated in a frying pan so that they reveal their taste and aroma, and they do not need to be crushed.

The flour must be sifted, preferably not once, but twice. This promotes improved yeast performance. You can also dry the flour thoroughly before using it to reduce the time it takes to rise the dough.

To do this, the desired amount of flour should be poured into a bag, tied and placed on the radiator for two or three days. Then sift and use according to the recipe. If you get used to doing this every time, rising the dough will take not an hour and a half, but forty-five minutes.

Real dried apricots are dark in color and don’t look as appetizing, but they actually contain vitamins. Bright orange dried apricots contain a dye added by manufacturers, and they are much tougher than natural ones. Of course, in this case there is nothing to say about vitamins.
