We will need:

  • cottage cheese with regular fat content (5-9%) - 600 gr. If you take it in packs, 3 packs will be enough
  • 2 eggs
  • 4 heaped tablespoons of semolina
  • sour cream 5 tablespoons (or any fermented milk product - kefir, razhenka, bifidok, but it tastes better with sour cream)
  • 3-4 tablespoons of sugar, depending on the taste of the cottage cheese
  • raisins or other dried fruits 1 handful (about 50 g)
  • vanilla sugar 1 sachet
  • salt 1 pinch
  • butter for greasing the pan

1) first mix semolina with sour cream or kefir. If the sour cream is thick, you can add a couple of tablespoons of milk. Let it swell for about half an hour. During this time, stir the semolina several times.

2) while the semolina swells, prepare the cottage cheese. If it is grainy, it must be rubbed through a fine sieve or you can pass it through a meat grinder with a fine grid. If you don't do this, the finished casserole will have lumps and it won't be as smooth. Try to buy soft cottage cheese right away. If you have a blender, you don’t have to puree the cottage cheese.

3) beat eggs with sugar, add vanilla sugar and salt. Don’t be afraid to add salt to dessert, it’s not enough and it will make the taste of the finished dish brighter

4) mix cottage cheese, swollen semolina and beaten eggs. Mix it all with a blender

5) then add well-washed raisins and stir the whole mass with a spoon, otherwise the blender will grind the raisins into pieces. Before adding to the dough, raisins need to be steamed so that they are not dry. But if you fill it with hot water for a long time, it will become like a mess. You just need to rinse in hot water and pour over boiling water, then take out the small sticks.

6) grease the baking dish with oil and sprinkle with breadcrumbs. If they are not there, you can sprinkle with semolina. I bake more often in a silicone mold; there is no need to grease it, just rinse it with cold water, nothing sticks to it.

7) put the curd mass in the mold, level the top with a spoon or silicone spatula and put 2-3 tablespoons of sour cream on top and distribute over the entire surface. This way the top will not crack and will be soft.

take out the mold and leave for a few minutes, then remove the casserole

1. Place a small piece of butter (20-30 g) in a frying pan, add a couple of tablespoons of brown sugar (ordinary sugar is fine) and 1 tbsp. spoon of water.



2. Place our apples and cook over medium heat for at least 5 minutes. Leave them until they cool.



3. In a separate bowl, beat eggs with sugar until fluffy, adding a pinch of salt. The amount of sugar and salt is to taste.


4. Mix flour with semolina, add baking powder and vanillin. Stir until smooth.



5. Add to the egg mixture.


6. Mix the prepared raisins and dry cranberries (washed and dried) with a couple of tablespoons of flour.



7. Add lemon zest and 1 tbsp to the cottage cheese. spoon of lemon juice, mix.


8. Also pour half of the egg-semolina mixture into the cottage cheese.


9. Add raisins with cranberries, the second half of the egg-semolina mixture. Add dried fruits to your taste. In our case, raisins add sweetness, cranberries add sourness.



10. Place caramel apples in a mold greased with butter.


11. Add our curd dough.


12. Place our pie in an oven preheated to 180 degrees and bake for 35-40 minutes. Check readiness with a toothpick or match.

Cottage cheese casserole with cocoa is a very beautiful and tasty dessert. By alternating layers of different thicknesses, you can each time get a new, unique masterpiece with the taste of chocolate.


Ingredients:

  • Cottage cheese – 500 g
  • Sugar – 1/3 cup (to taste)
  • Semolina – 4 tbsp. spoons
  • Milk – 100 ml
  • Cocoa – 3 tbsp
  • Vanillin

Let's prepare a very tasty and very beautiful casserole:

1. Add two eggs, sugar, milk to the cottage cheese. Mix with a fork.



2. To make the mixture more homogeneous, stir it with an immersion blender.


3. Add semolina and a pinch of vanillin. Stir and let the semolina swell for 20-30 minutes.


4. Pour our dough into two containers, into two equal parts (you can have unequal ones, it will turn out more white or dark). Add cocoa to one of them and mix.


5. We will add dough one tablespoon at a time into the prepared silicone mold, gradually alternating dark and white dough. If you apply two or three spoons at a time, the stripes will turn out wider (higher).



6. We will draw patterns with a sushi stick or toothpick. From the center we draw to the edge of the form, and back. You can draw patterns that your imagination allows.



7. Place in the oven for 40-50 minutes, preheated to 180 degrees. Check readiness with a toothpick.

Cooking process:

2. First fill the semolina with milk so that it swells a little.

Ingredients:

  • Cottage cheese 600 grams.
    Rice 150-200 grams.

    3-4 chicken eggs.
    Wheat flour 1-2 tablespoons.

Cooking process:

3. Pass the cottage cheese through a sieve or grind it using a blender or meat grinder. This will make the casserole more tender and airy.
4. Beat the eggs into a bowl, add a little salt and beat the eggs in any way until a strong foam. Next, add sugar and pureed cottage cheese. Mix everything well, if the mass turns out to be too liquid, add a little flour, mix, add cherries, boiled rice, a tablespoon of softened butter. Mix the dough until all the ingredients are a homogeneous mass.

Many recipes say that in order for the whites to whip well, they must first be cooled. But I can tell you that for casseroles this point can be neglected. Since we don’t need to beat the eggs until thick foam or, as they say, until hard peaks form.

2.Mash the cottage cheese with a fork or grind with a blender.
3. In a deep bowl, combine almost all the ingredients: cottage cheese, starch, vanilla, yolks, sugar, sour cream. Mix everything well and give a little time for the sugar to completely dissolve.
