How to cook minced meatballs with rice. Meatballs with gravy

Among the huge number of hot dishes made from minced meat, each of us has a priority. These are the dishes that are loved more than others, and which are difficult to refuse when you smell their aromatic smell. Meatballs belong to this group. Ideal in size, tender and, if a piece of the soul of the person who prepared them is put into them, infinitely tasty, they have been walking with us through life since childhood. Meatballs have been familiar since kindergarten to the Soviet man. Every dining room had meat balls made from various types of minced meat on its menu.

The main point in meatballs was and always will be minced meat. Therefore, it is important to choose the right meat if you are planning meatballs, chicken if you are going to cook chicken ones, and fish, respectively, if you really want fish “balls”. You shouldn't buy expensive meat - there's absolutely no point in it. For meatballs you need to use first grade meat. It is cheaper, and we must remember that minced meat is minced meat, not steaks, which require only the highest grade, and nothing else. Any meat grinder can turn even the second grade you bought into the most tender mass.

With chicken and fish the situation is simpler. There's no point in using chicken breast, unless the meatballs are intended to be dietary. Legs and thighs are the ideal parts for minced chicken. Well, if we talk about fish, then it’s better to take at least two types of fish. From the one that is cheaper. With today's refrigerated prices, it would be cheaper to make meatballs from beef tenderloin. Take any fish fillet that takes your fancy and you can’t go wrong. Well, in order not to be mistaken at all, below are the best options for all occasions.

The good thing about meatballs is that you can add almost all compatible products to the minced meat. Meatballs with mushrooms, for example, turn out very good. Don’t be lazy to scroll through your minced meat. In this option, you are absolutely sure of what it will be made from, unlike store-bought minced meat. It’s a good idea to add a little chicken skin to the minced chicken. But store-bought minced chicken is guaranteed to contain an amount of skin that exceeds all reasonable limits.

Classic meatballs with rice recipe

Classic meatballs with rice served with a side dish. The most common and delicious option is mashed potatoes.

Ingredients

  • Rice – 400 g;
  • Minced meat – 1 kg;
  • Carrots – 1-2 pieces;
  • Onion – 2 large onions;
  • Tomato paste – 3 tablespoons;
  • Sour cream – 200 g;
  • Water – 2 glasses;
  • Vegetable oil – 1 tablespoon;
  • Salt, pepper - to taste.

Preparation

To prepare meatballs according to the classic recipe, you need to start with rice. If you want to cook the meatballs not today, but the next day, pour boiling water over the rice overnight. By morning it will swell and will not require pre-boiling. Otherwise, the rice needs to be boiled. Pour water over the rice until it covers a little. Place on the fire, bring to a boil, and reduce the heat. We wait for the water to boil away. Cool the cooked rice to room temperature.

In the meatball recipe, the rice is always boiled; the rice is not boiled when preparing “hedgehogs” with rice - this is similar to meatballs, but is prepared a little differently.

Peel the carrots and grate them on a fine grater. Chop the onion as finely as possible. Fry the onion in vegetable oil, then add carrots to it. Fry them together for 5 minutes.

Now let's get to the minced meat. If you cook it yourself, pay attention to the freshness of the meat. Fatty meat is not suitable for this dish. If you use store-bought minced meat, pay attention to the fat content. Fatty meatballs will disintegrate.

Combine minced meat, half-cooked rice, and fried onions and carrots in a bowl.

Mix the mass well. Salt and pepper the future meatballs to taste.

We form balls from the mass. Place them in a pan in one or two layers. Use a thick-bottomed pan so that the meatballs do not burn during cooking. If there is no other pan, then place cabbage leaves on the bottom, they will protect the meatballs from burning, but if there is no cabbage, then make a pillow of grated carrots for the meatballs.

In some recipes, the meatballs are pre-fried; this can be done to ensure that the meatballs do not fall apart. In this recipe they are not fried, they turn out whole and soft.

Dissolve tomato paste in a glass of water. Add sour cream and remaining water, mix well. You can add a little salt.

Pour the sauce over the meatballs. The sauce should cover the meatballs 2/3. If there is not enough, add some water directly to the pan.

Place the meatballs on low heat and cook covered for 35-40 minutes according to the recipe. Serve classic meatballs with rice and minced meat with a vegetable side dish or mashed potatoes. You can serve them as an independent dish.

The dish allows you to cook juicy meatballs and a side dish at the same time. This technique allows you to kill two birds with one stone and significantly save time. When serving, you can pour sour cream over them, and, if desired, boil mashed potatoes, rice or spaghetti as a side dish. A step-by-step recipe with photos of preparing meatballs in tomato sauce with rice will allow you to easily repeat this wonderful dish, even if you have never cooked it in your kitchen before.

  • Meat – 1 kg
  • Onions – 2 pieces (medium size)
  • Rice – 100 grams
  • Garlic – 3-4 cloves
  • Tomato paste – 3 tablespoons
  • Bay leaf – 3-4 pieces
  • Allspice peas – 6-7 peas
  • Ground black pepper – 0.5 teaspoon
  • Salt - to taste
  • Any seasonings and spices for meat - to taste
  • Refined sunflower or other vegetable oil - for frying

Wash the meat, dry it and cut it into pieces. Peel and wash the onions and garlic. Cut the products into pieces of such a size that they fit into the neck of the meat grinder. We will also prepare a meat grinder by installing an attachment with a medium sieve.

Grind the meat, garlic and onions through a meat grinder and add semi-boiled rice, which has been boiled in salted water, to the resulting minced meat.

Season the minced meat with salt, ground black pepper and your favorite spices. I added: a mixture of freshly ground peppers, ground ginger and ground paprika.

Mix the minced meat well so that the ingredients and spices are evenly distributed.

Let's form round meatballs, the size of a medium tomato. To prevent the minced meat from sticking to your hands, wet your palms with cool water before forming each meatball.

Heat a frying pan with vegetable or other oil and fry the meatballs.

Fry the small cutlets on each side for about 3-4 minutes until a light golden crust forms.

If you simmered the meatballs in a high-sided frying pan, you can remove them from the heat for now. If you do not have a deep frying pan, then place the fried round cutlets in a saucepan, cauldron or wok in which you will simmer them.

While the meatballs are frying, prepare the tomato paste sauce. In a separate frying pan, add tomato paste, allspice, bay leaf, a mixture of freshly ground peppers and salt.

Fill everything with water, mix and boil for about 7-10 minutes.

Pour the prepared tomato sauce over the meatballs. Close the pan with a lid and put them on the stove to simmer over low heat after boiling for 1 hour.

Serve the finished meatballs with rice hot, pouring over them with the gravy in which they were stewed.
