  6. I leave it to cool on the stove. Some of my friends cook Victoria in three batches, but two was always enough for me. Someone even manages to cook jam in one hour, but this was not in my grandmother's recipe, so we will adhere to the canons. The main thing in the production of jam is not to overcook it, otherwise it will be ugly and tasteless. Yes, and not very useful. In addition, overcooked jam will quickly become sugary and unfit for food.

I have never bothered with sterilization. I have a second refrigerator for winter preparations. I keep my jam in it. Sterilize the lids and roll up the jars only if you plan to store the jam in the cabinet.. But one forgotten jar stood on my shelf and did not even turn sour.
